Is there any limit on dates?
Let me be clearer.
You can go on dates with several characters, and the final dialogue after each one progresses after each date, and so does your relationship.
Is there any sort of route you can take that limits who you can go on dates? For example, if you go on several with someone, does it block you from going with another character?

No it doesn’t, when you get enough affection points, you get to choose which character you can get their ending with. This process can be repeated as much as you want (whether it may be for achievement purposes or otherwise), given that sufficient affection point is acquired for that character.

Unfortunately, you can’t check affection points in-game, but just before the final boss fight, you get to see characters that have heart emojis sticking out of their heads. This is the indication that enough affection point has been acquired for that character’s special ending.

After you defeated the final boss, you do unlock addition grimore sigils (such as bonus cash) that you can use to buy endgame items in the shop that’ll help you boost affection points faster.

That means you're free to do whatever you want with no repercussions, and before the final boss fight, you make a simple choice and get [character] ending?
That makes things much easier

Also, you'd need to save/load to get all achievements, right?

You get to save after the final boss fight. Once you load that save,you'll be in the area right before that fight so you're free to do all the endings or go back to town to do post-game content.
