When you dodge, the game will enter slow motion and you will see a pair of reticles aligning on his eye. This is what the devs called "Adrenaline Dodge" (dumb name, yes, but what can you do).
When the reticles align, they will turn from white to red and you will hear a ping. Shoot THEN and he will tumble into the spikes.
This is ridiculously annoying when you don't know how to do it or got out of practice, but it's critical to taking down other bosses and once you have it down pretty useful for taking down lesser enemies too (since the shot kills them no matter their health).
Key thing - do not use the shotgun for this fight, it just doesn't fire fast enough.
