Edit: Also, for a slightly more technical answer, it would be better to wait to metamorph until your familiar has learned all of the tricks that it can at that stage. For example, Destroceros, the 2nd form of the strongest melee familiar in the game, can metamorph at about level 10, but learns belly buster, one of the strongest offensive tricks, at level 16. So really, as far as I know, it comes down to the level of flexibility you want to have with your familiars.
I didn't know certain abilities were tied to specific forms. This makes sense.
I'm fairly new to the game and about 15 hours in.
