Lost Power Coils
I ran to Levant paid the 200 silver for power coils ran back to the bandit camp in the starting zone intending to get the backpack. Wasn't paying attention and got killed in the camp and now my power coils are gone. I've searched the camp, looked in the black chests and checked my bag and nothing. Are these just gone and is that normal?

its not normal. sometimes its easy to not spot an item in the bag but these coils have a very unique icon to begin with.

you can also obtain the coils in the supply chests in chersonese sometimes just for info. or get them 100% from the vandavel questline aswell which happens in the area.

or travel to harmatten from cierzo and buy them there or just kill some rusty golems for them there.

The power coils will naturally be expended when opening the storage door, though I assume you were defeated before you got the chance to do this. I've read that bandits will sometimes take silver coins and/or precious gems from your inventory if they defeat you... I wonder if perhaps power coils are also on their list of stolen valuables?

You had them in your pocket then. Any item in your pocket has a chance to be lost forever upon death. Or you didn't drop your bag before combat. If you don't have a bag with inventory protection the getting hit on the bag will destroy items inside. This even includes gold bars. You didn't lose them as some bug I promise you. You lost them from legit in game mechanics.

Really? I always assumed it only dealt damage to durability, and that items without a durability stat were exempt from this. But, I also always drop my bag before combat, so I guess I wouldn't know.

I also think that this only affects Items with durability. I sometimes get a Message like "Mining Pick is damaged" when my Backpack gets hit and other Items lose Durability too, but i never lost an Item without Durability because of this. I fight often with my Backpack on, so i think i must have encountered this by now. Or maybe i'm just Lucky.

Not quite "every" items. There are items that have a tag "valuable" and some defeat scenarios (generally when it is related to bandits) will steal a certain amount of items with the tag valuable. Other example of items with that tag are the gems. Sorry, but you've been robbed.

You are correct. The only items that can be destroyed this way are perishable food. Being hit depletes their durability meter and decays them faster. Lanterns will run out of fuel. Armor and weapons (mining picks and fishing harpoons included) will be break and require repairs. Nothing else will be affected.

This is really easy to test. So, I don't know where the misinformation even came from.

If an item does not have a durability stat, it has infinite durability.
Doesn't stop defeat scenario thefts from occurring as the devs have confirmed, of course.
