> Greataxe - Moveset. The heavy attack is actually two heavy attacks. It can be chained into another heavy attack.
> Mace + Shield: Blocking with shield consumes no stamina (only knockdown health bar.)
> Spear and Greatsword: for their Insane Parry skills, Range. Very effective.
> One handed Axe: 3 swings with Heavy attack.
> Dagger + 1h: Axe with bleed damage and dagger with backstab.
> Any 1H Weapon with a Shield: When enemy's stability bar drops less than half, your attacks will interrupt theirs.

Seems like lots of valid methods best to use what works best for you then try to force something because of the meta.
spears have good range, but they lack both impact and damage while also having bad attack hitboxes (only chained heavy has good hitbox), when outnumbered the hitbox makes it suboptimal, in 1v1 Shields+Mace is supreme thanks to Shield charge, high impact and the ability to, completely safely, block and punish most chains (you will usually take no damage in 1v1 with a shield)
Also I enjoy an eternally burning fire poker, just because it is silly
