Well, there is a red bar that you can fill by taking damage. Once that is filled, it gives you access to a room that gives you your choice of three items in exchange for sacrificing one heart. And, on rare occasion, a token or coin drops. And this item is what gives you access to Ares after you defeat Zeus.
Good luck. I've been trying to get this damn thing for ages with no luck. I read that it has a high drop rate, but I've only seen it once out of a all the times I've been to the sacrificial chamber.
On the other hand, you can convert that purple bar into a red bar by hitting the chests / doors and turning them red. If you do, the red bar will increase and in turn, you will take damage instead of consuming crystals to open them. Another way of filling the red bar is completing a room after taking a damage. Once the red bar is filled up, you'll get access to the sacrifice room that lets you sacrifice one health container, and then lets you choose from the items it gives. Similar to the faith room, after picking the item you wanted, sometimes you'll get a token that then lets you access Ares after beating Zeus.
In conclusion, purple is for Athena, and red is for Ares. You can access them via the token from their respective rooms with RNG. Sometimes, you'll have to access their rooms multiple times before you get the token, sometimes you'll only need to access it once. Again, it's RNG if you want to fight Athena / Ares after Zeus
