signals/road signs on tunnels and bridges
plz add, it would make us able to make much better highways and junctions

You can signal on bridges, but only if you generate nodes by building in multiple parts.
Im not sure that is true for tunnels as well, but it might be.

Yes, sometimes you can.
But you can't really reliable do it. Placing of railroad bridges is a pita as they always snap down to somewhere you don't want them and then you are at level 0.

Bridges and non-metro tunnels can have signs/signals placed on the nodes between bridge/tunnel segments, but that is it. Since bridge segments cannot end over water, you will have to raise the land above sea level or resort to landscaping mode trickery to place bridges piecemeal.

If you care about realistic constraints, note that many bridges and tunnels are not split up into multiple blocks in real life for fire safety reasons.

Its odd to me that as intricate as the game can be tunnels cannot intersect and you can't have intersections on bridges or offramps

Junctions at tunnels and bridges is something that I miss a lot since I'm a fan of making complex junctions.

A lot of features, including realistic mode, were not planned for at the start, so incorporating these features would require overhauling a lot of the code. The developers don't think it would be worth the effort, so we are unlikely to see it.

To be more precise - dev team is small and providing such things basically mean writing the road code and everything related (vehicle movements and so on) from scratch. But that thing would take TONS of resources (time, money, etc.) and would inevitably lead to many more bugs related to ... well ... everything.

It would take at least two years to fix everything and in that time you could say they would be asked for optimisations, new features and so on nevetheless. And the amount of work necessary would equal to basically a new game.

So that is exactly what are they going to do. As shown in Instagram and else, some of them are ALREADY working on Workers and resources 2 - which will have all of these things addressed and will have a free space of upgrading/changing any other stuff that works but could be better (factory connections, crossroads, terrain works etc). After all this game works well enough and a sequel is a better option after all :)
