I always have a depot between the woodcutter and the sawmill because some industries require logs.
Same here. More or less.
The storage with the bricks and logs are connected to the carpenter shed mod.
This way I have enough boards for construction and I still can pick up lumber if I need it elsewhere.
You asked here, and that's a smart move.
1) The building identifies the trees around. It needs a very few amount of workers to cut the trees down. Them it will show in the UI ~"cutted trees in the forest".
2) The next step is to bring the logs in the ground to the building. This is done by the trucks, and the speed they load the trees is the speedlevel of the truck (not 100% verified).
To make the most wood you need the best speedlevel trucks possible, as they are the bottleneck. You can assign only one 7-seat small van to cut the trees, maybe less (as long as there are logs for the trucks to pick up). Usually the workers are much faster than the trucks.
