What is the function of the "traffic simulation" setting?
What effect does simple vs complex have on gameplay? Does it change default behaviour of vehicles or does it simply add options for customizing crossroads?

To my experience it effects the behavior as well.
During darkness on an Asphalt road without laternas vehicles slow down to 84. Dunno if that is the default speed.
At junctions without signs vehicles slow down a bit.

Maybe something more.
But that's what pops up in my mind first.

Also I can't guarantee that the above described behavior happens with traffic simulation of.
I never played without.

Main difference is that you can use traffic signs. They should change name of that option to be honest. For example: „Traffic rules: [simple] [custom signs and lights]

The main change is that vehicles can no longer phase through each other at intersections; they have to wait for the way to be clear or to have right of way. The game gives you road priority signs (yield, stop) and traffic signals to help deal with this.

Cars will care about other cars at crossing, you should get less quick traffic due to this, and you should then optimize network by primary secondary roads or signals

I haven't gotten to this point yet, but it's interesting to be able to make such a realistic road network...

-what would be nice are traffic lights for individual lanes

The game does not currently support junctions on bridges nor tunnels.

Main roads with fewer intersections, usually higher speed limit and potentially a lot of traffic.
Secondary roads that connect to a main road with more intersections but also less traffic.

It's more of a mental separation, main roads don't have to be necessarily bigger.
