Water Pipe Size
I have a large water pump, which has three output connections. I built a small pipe out of the middle one that goes to a substation, and it works fine. But now I need more water capacity, so I built another pipe, this one a medium sized one, which goes to a 2nd substation. It doesn't look like any water is flowing to that one. Should I have built a small pipe instead? And now that I need to build a third pipe, does that one have to be small as well?

If there's no water at all flowing through the new connection I would suggest checking if the new pipe is actually connected to the pump or if it just got "near snap"ped to a spot that looks like a connection.
There are a dozen other things that could be wrong but you'll need to post screenshots or they will be difficult to diagnose.

Okay, but a large water pump should be able to handle 1 small pipe and 2 medium pipes flowing from it? That's really my question!

Pump can handle any amount but depends on your input pipe (max 3x biggest pipes - 3x 127m) (if source is able to give such amounts...). if you have input small pipe and output 2 pipes no matter the size max flow will be always max flow of input pipe (small 26m). To be honest easiest way to not have problems is to build biggest pipes all the time amount of steel need is not much difference anyway

Keep in mind that the flow into and the flow out of the pump need to be equal. If the inlet flow is throttled for some reason (too low pressure, too small a pipe size, upstream bottleneck, etc.) then the outlet flow will be too after the pump's tank drains.

A pump's inlet pressures will also drop as more pipes are connected to the inlet connections of the pump, but only when water flows through them. The same goes for outlet pressures.

Update: Turns out my 2nd pipe was not connected to the pump, though it looked like it was!

This is hard to see and happens to often. Also with electric lines.
Should be a "connected" symbol or smth

If the pipe is connected, then the connection point icon will not be displayed when you have a pipe size selected for building.
