Farming field output
So this is something I've been wondering for quite a while now, why is the crops output of the fields so small? I have a large number of fields and farms (three times the size of my town) but the crops produced is so low that my one factory and distillery is always empty.
Personally I think it would be great if the fields had a larger output, because it feels kinda off.
At this rate I will have to cover the entire map with fields and farms to sustain a medium sized town with a population of 50'000 people.
Is this something that is in the works too?

With winter ON and 1960 farming vehicles (tractors and harvesters), I use 1 farm with 24 fields and 2 DO's for every 20.000 people.

With winter OFF and 1960 farming vehicles (tractors and harvesters), I use 1 farm with 24 fields and 2 DO's for every 30.000 people.

This is only to my food and alcohol factories, if you build textiles and chemical, you will need a littile more fields.

By the time, you get better and faster vehicles, so keep in mind upgrading your farms as the time goes on.
Farming needs a lot of land.

A Big Field in game is 4.81Ha and produce ~300t per harvest. So.... Actually we have x20 production already.

You need 50 large fields to support one food factory throughout the year. Or you could import. I love this neat reminder that food deliveries are not a small field on the outskirts.
the following info I got from various posts here on the forum:

large field produces 300,34 ton/year (~0.8 ton/day)
medium field 98.06 ton/year(~0.25 ton/day)
small field 24.52 ton/year(~0.07ton/day)
these are when seasons are on, I don't know if seasons off has a an impact on crops/day

1 food factory feeds about 40.000 people (takes 42 ton crops/day, so 42*365/300.24->51.06 large fields to keep a food factory running at max efficiency throughout a year)
1 livestock farm is enough for about 40.000 people
1 clothes factory is enough for 80.000 people
I see, so its not that the fields produce too little, its that all the other facilities have such a huge capacity that creating a surplus which needs a grain silo is almost impossible.
Its a relief to see that its not a incomplete feature, because I was honestly worried that I would end up with 80% of the map filled with farms. thanks for clearing it up :)
Are you sure it is fully cleared up? There is a lot to learn.

If your farms are set up properly, they should be pumping out crops so hard you can't haul them off by truck. bbaljo made a farming tutorial, which I recommend watching. Because it was made before the farming update, it shows the old farm building, which corresponds to the medium sized farm in the current version. To summarise, each farm can manage 18 large fields and 6 medium fields, but only if you sow in the medium sized fields first, and only if you get good tractors and the $ harvesters. You need six of each, which take up all the vehicle slots at the medium sized farm. Trucks are located at the two medium sized DOs. These trucks only bring the harvest to the local silos, which are connected to a rail cargo station, from where they are picked up by train.

Personally, I like to include a gas station so I don't have to deliver fuel to two DOs, AND the farm, AND any technical services, but only to a single gas station. I also like to omit the medium sized fields to leave room for some other buildings (technical services, construction yard, power infrastructure):

Because food is a high volume commodity of which you can never have enough, I like to build my food factories in pairs. They each have their own input silo, which is connected to a single rail cargo station, and share a single output warehouse, from where a rail DO collects the food and delivers it to distribution warehouses located near population centres. Trucks are only used to deliver food from the distribution warehouse to the shopping centre, and to haul off containerised surpluses to the border, because there would be too much traffic otherwise.

This is how I do it, having watched bbaljo's farming tutorial, but I'm sure there are other viable approaches as well.

Also you will quickly find that the vanilla grain silos have a very small capacity. To avoid having to build dozens of them modded silos like these ones do a very nice job:
