You can get through the game basically with any builds you're willing to put up with.
But I figure you'd have more fun if you explored your options more and tried out different builds.
By default you're only limited to switching out weapons and equipment. But things like engine rating, type and internal structure and ferro fiberous armor is locked to the chassis.
In addition the game starts in 3015, so a lot of the advanced tech and weapons present in MWO will not be available from the start. But you can come upon occasional lostech through reawards and drops. Plus rare and hero type mechs can appear in markets which can have some advanced lostech installed.
