YAML adds more hardpoints and more mech variants, and gets rid of the hardpoint size limitation (so you can put any size weapon in so long as you have room in your mech).
There may be mods that unlock things further, but that should give you all the customisation you need.
They are, as far as I can tell.

Correct me if I am wrong, but I believe YAML also unlocks the single ECM hard-point restriction that you used to have with MW4, MWO and MW5-Vanilla. Now you can install ECM equipment in any slot, and in any mech variant.
Also make sure you also look at Advanced on the mech loadout.
But also know that a laser slot can only have laser weapons and a balistic can only have ballistic weapons. YAML doesn't change this. It only makes it so slots that before couldn't hold more than an S-Laser can now hold fe an L-Laser if the mech part has enough slots avail.
But yeah, it's entirely possible. Maybe as a cheat mod option in YAML with lots of warnings :)
