I eventually sell most salvaged mechs after it becomes obvious that I will no longer use them. Despite this, however, there are some light and medium mechs which are very useful later in the career/campaign - especially when you improve their lethality and mobility with quirk upgrades.
Also, it helps to know in advance, which mechs to keep and which mechs to sell. This knowledge can only be gained by completing campaigns and gaining the experience necessary to determine which mechs are the most effective for each of the mission types (Warzone, Beachhead, Garrison, etc),
anyway there is only a small mech that I don't need as a reward anymore.
Of course, that also makes it very difficult to explain why I have an entire catalogue of naked, legless Locusts.
