The game was originally made as a tabletop thing, so things like "how do the firing groups work" was never a concern. You'd just look at the distance to the enemy, pick the weapons off the list, and say "these are the guns I want to use." What that experience would actually be like never really came up, which is why you have a bunch of different guns with different ranges scattered all over the mech.
In this game, the really good weapons are ones that are either light enough that you can carry a lot of them, or strong enough that you don't have to. And the good mechs are the ones that let you do that.
If you want an 80 ton mech, I would suggest an Awesome, specifically the AWS-8Q. It has three big energy weapons, no other tricks to it. Two in the body, one in the arm. There is also the Victor, as most of those carry a big gun in one arm, a pair of medium lasers in the other, and a token missile launcher in the shoulder.
I salvaged a Zeus from my latest battle. Used for 5 mins and the put put in back where I found it. I live and learn - at least it wasn't a 60 tonner.

Don't you have a mouse with extra buttons? It is completely common now to expect a gamer to have a mouse with at least two extra buttons nowaday. This mean 4 weapons groups easily accessible with your left hand, leaving only two extra for stuff you barely ever use (like melee). I've personally never needed more than 5 slots on any given mech (and that fifth slot was for melee as well).
One trick I love is to place a lot of similar weapons (like a bunch of medium laser) on a sequence in a firing group instead of having them all fire simultaneously. Provide a lot more control for pretty much the same damage output and help not to overheat when I only want to fire one or two at a time. One of my favorite mech has something like 15 medium lasers... Yeah, I know, that's quite a lot. And it works wonders. :D
Edit: Oh, and if you are willing to then you could also easily remap the middle button for one extra group...
I just started playing a new campaign. I am not in the position currently to waste time and search for mechs I want (waste of C-bills traveling). I use what I figure I can currently get by with. In a way... It is somewhat fun... Having to use mechs I would never use at end game.

Hello friend. I was just talking in general. Being a lowbie at the start of a new vanilla game. I do not use many mods - and no big mods. I find that many of mods out there tend to cause issues. But now that you brought it up - I think it would be grand to have a mod where you were not the commander - but just a mechwarrior pilot. So you would not have the full freedom of having what you want - all the time.
