High GPU and CPU temp
I'm playing Doom Eternal in 1440p and i get CPU and GPU at 80-85 C°. I don't think this is a normal temp, i have an I9 9900K and a 2080 TI aircooled with Deepcool Castle 280. Case: Silverstone PW01-RGB.

If you have plastic covering near your fan, TAKE IT OFF because it keeps all the hot air in there and reuses hot air to supposedly cool itself down!

I haven't plexiglass, i played again and i reached 95 C° on CPU.

This does not sound like a game problem. Try other games that max out your hardware and see how it reacts there.

It mostly depends on how hot your room is or maybe you need reapply thermal paste.

What program are you using to monitor the temps?

I have these temps with all games this times, with Doom Eternal i had 95 C on CPU and 85 on GPU.

Yeah, intel runs hotter than AMD does these days even.

Yes but 95 C seems really to hot.

If you still have warranty on your hardware I would advise you to just leave it be.
Your CPU and GPU won't die that fast. If they reach the limit temperature they will underclock to protect themselves from "death". Having them long periods of time at those temperatures It will shorten their life tho. Lets say from 8 years to 7.
Considering the beast of a PC you have, I think you will be upgrading it in 1 or 2 years.

That software is very good for the GPU, but try HWInfo or CoreTemp 64. They may give a more accurate temp readout for your C P U. Another is CPU z.

Both are free.
Also, try setting a better fan curve for cooling your GPU; in Afterburner click settings, then the "fan" tab and adjust the curve so the fans spin up earlier. 85C is nearing the limit for that card but it could be the fans don't come on early enough. Make sure to check-mark "Enable user defined software...." box.

It's still in warranty, that's why i haven't opened the case to clean up or apply thermal paste. On September I'll bring my PC to the shop and i replace my 2080 TI with a 3080 TI / 3090 hoping that I9 9900k and PCI 3.0 will not do bottleneck.

Hell, if it's under warranty contact the seller or the manufacture and see what they say. DO open it and clean it; that might be all it takes to make a difference.
You can also call the tech support people for the video card or CPU and see what they have to say about the temps: My GTX970 runs about 8-10C hotter then my 960's did but the EVGA tech advised that his 970 ran about the same temps or a little warmer in game (still below maximum).

EDIT: one other thought - are you sure your AiO cooler pump is spinning up to maximum and or the radiator fans.

How old is your PC? is air flow good in your case? your ambient temperature?
try remove the side panel then check how hot it is.
if remove side panel works then you have air flow problem.
