lmao I made the same mistake as OP. I didn't realize it would deactivate on death.
Adaptive difficulty has been a feature of lots of games since at least the 80s. Most of the time it doesn't tell you it's happening. Maybe all those games you beat as a kid were taking it easy on you and you never even knew.
List of games from the 80s?
I know SNATCHER on the MSX had it, that was '88. I played a pong-type air hockey game released in the 80s that scaled difficulty, but I don't remember the name.
Edit: Some cursory research turns up Astrosmash from 1981.
Snatcher? How the hell would that work lol. Tvtropes gave me this:

Similarly, the only thing I can think of off the top of my head was Mario Kart 64. But also in that game, the CPU becomes better if you play better. Like I recall getting first in the first race of a grand prix led to smart ai for the rest of it.
