While I haven't had them take action yet, the agents have messaged me asking for the following:
1) The email of the Bethesda.net account I want unlinked from Steam.
2) The ID of the Bethesda.net account I want unlinked from Steam.
3) The ID of the Steam account.
4) An general explanation of what I want them to do.
5) A confirmation that I am aware of the data that will be lost and cannot be restored (if I lose my pre-order bonuses, I'll fight that battle at a later time).

I hope that can save others some time.
Same here, the game didn't let me choose my Bethesda account to login to and there is no way for me to change it, here is what customer support from Bethesda had to say.

Please be aware that unlinking your Bethesda.net account has several effects and not all accounts are eligible for an unlink.
However, if you are interested in this process, please note that you will lose access to content in the below Bethesda.net compatible titles as follows:
Fallout 76 - All Game Progress Data, this includes characters, purchases and Fallout 1st membership.
Skyrim / Fallout 4 - Only Creation Club purchases/Mods
Rage 2 - Unlocked event skins and bonus content
The Elder Scrolls: Legends - All Game Progress Data
Quake Champions - All Game Progress Data
The Elder Scrolls: Blades - All Game Progress Data
Wolfenstein: Youngblood - Unlocked skins
DOOM Eternal – Battlemode / Battlepass progress, Pre-order content, Deluxe Edition content
Slayers Club - All points and activity
Note that linking your accounts/consoles to a different Bethesda.net account will not restore the items listed above. This information cannot be moved between accounts.

I won't comment any further on that atrocity from Bethesda.
Not a way to treat your customers.
I recommend refunding and trying to buy again, if the same thing happens, file a complaint to Bethesda.
