Cultivator to Harvesting STA ratio?
How many harvesting station per cultivator is ideal?

3 Harvesters 1 Cultivator, but thats mostly the ideal if both have the same level.

and the placement would be on each side of the cultivator except the one where the water comes in? Or should I put them at different sides on the edge of the harvesting area but in range of other cultivators?

One of the optimal approaches is to leave some space in immediate vicinity of cultivator and put 4 harvesters close to that space. This way all of the growth will be picked almost right away, so you won`t need more space, while fly distance for all drones will stay minimal.
