If I destroy a statue how do I cleanse my "guilt" not even sure what that does and where it is located...

if you donate a certain amount of tears in the box inside the church, you can use the box as an altar of repentance

There are multiple Statues of Confessors in Cvstodia. Even if you've destroyed all of them, you would still be able to cleanse your guilt in the church of Albero, but you need to invest some amount of tears in it.

If you die, you loose your max fervor until you go to the place you died and recover your guilt. Or you can cleanse yourself in one of those statues.
Unless you are close to the end of the game, is better to no destroy them.

Once you get the church alter working, I found it better to smash the statues as you go. Better than to have to backtrack to them all at once.

They provide some new kind of way of play once you destroy them but that's kinda spoiler. You can easily google it or try it too find out yourself by destroying them all. Since there is another way to cleanse your guilty, i suggest you to destroy them on sight.
