However, it is very possible to beat her, and once you know the moves it is just a matter of time, or even somewhat easy. Observe her attacks and make use of the combos at your disposal, stay close to her and parry everything. Timing is very important in this fight. Eventually you will defeat her, as many of us did.
Pay attention to what she's doing, you can parry/block ALL of her attacks. You can cancel your attack into a parry, so while attacking pay attention to see her winding her sword, that's the time to parry. Parrying/riposting her attacks will leave her staggered for a little bit. Don't get greedy.
If she goes into the blocking stance, you can go to the extreme opposite side of the screen, parry/block the incoming attack (as soon as she twitches, it's about time to block using the Mea Culpa heart that improves blocking stance), and, since your back is against the corner of the screen, you'll be able to quickly recover from the block animation to connect some attacks.
If she does jumping diagonal slashes, be aware that if she hits the corner of the screen, she'll do a backflip and do the same attack AGAIN. Pay attention. You can punish her during the landing animation.
Once she starts repeatedly doing the flying attacks, go to the middle of the screen and jump over her, you need to jump a bit before she starts the animation. Wait for her to disappear after doing the diagonal swoops, and attack slightly in the place she disappears.
If you need healing, Pelican Effigy is your friend. Otherwise, healing opportunities will be very slim. Try to heal once she does a backflip.
She's probably the hardest boss in the game right now, but not impossible.

not sure what happens after you beat him..but I would imagine the game is basically about to wrap up.
There's the weak and high defense beads. You'll need both of those. There's also one which increases your defense when your health is low, and that's the most important one. If you don't have all three of these, then the fight will be much more difficult. The spell that heals you as you hit enemies will also be helpful, as well as the bead which protects you while you drink a flask (I didn't have it at the time and still managed to beat her).
Anyway, with those 3 beads you should be able to just wail into her and only have to heal whenever your life is really low (and even if she hits you while you heal, it won't do much damage because of the high defense bonus). Parrying was not helpful during this fight as you can't retaliate as you could against the bridge boss. Riposte probably works, but I never learned how and still completed the game.
