I bought a deal for premium that came with a mount, I can’t find it? Appreciate any help

You most likely just got a skin for a certain mount. Open your inventory, there you can change your skins.

I also bought this package because of the bison. From the looks of it, it's just a skin, but the offer suggests that it's a mount. I have the feeling that there is deliberate deception here, because the Steam article only says mistbison not that's only a skin.

You can find all the skins you own in the "Appearance" window. Click on your character's portrait, choose "Appearance" in the drop-down menu, and then choose the Mounts tab.
