High damage in many cases has more to do with your spec level than with your choice of weapon. For killing hide animals quickly, especially lower-tier ones, it helps to have a weapon with two things: 1) range attacks and 2) at least one big area-of-effect attack. One YouTube video I watched recommended Longbow; at least a few frost and fire staffs should work about as well. The strategy was to use the low-damage range attacks to aggravate several animals, getting them to all converge on your position; then, when they were all together attacking you, use the big AOE attack (for longbow “Rain of Arrows”) to kill them all at once. But try it first on one to make sure that it does enough damage to kill whichever animal you are harvesting, because if not, having a bunch of them attacking you at once could be a bad move ;-)

I would recommend Bloodletter if you are going to use Skinner's garb. The high mobility helps with rounding up several hide mobs and spreading the poison buff between them. (just my personal favorite, but there are lots of options)
Additionally, it helps to get away from gankers :)
