Mage Gear (Cloth) > Damage And Heal Power Increase
Ranger Gear (Leather) > Attk Speed
Tank Gear (Plate Armour) > Health and Armor/Magic Resist
The reason you want to focus on a skill is each time you make something, you get more experience in that skill. As you gain experience, you can make better/stronger items and ultimately make higher tiers. The better you get, the stronger you are and/or the more money you can make from selling items you make.
Another note is that PvP is a big thing in Albion. Its a good idea to have backup armor/weapons. If you die in a red/black zone, all of your inventory will be taken. It isnt a bad idea to wear lower tier gear until you get a strong feel for the dangerous areas.
I make my own skinning tools and skinners gear, but I buy my weapons. The more things you craft yourself, the more spreadout you will be. While its all possible (depending on the time you put in) its generally not a good idea to try and do everything yourself.
EDIT - you can also make mining gear which I believe will give you experience toward the same skill IIRC.
