Remember that you can heal pretty frequently so taking 20k damage is no big deal.

You can use whichever you want really, as all you genuinely need from them is their ability to heal/restore ep.
Also, you can use Guard to remove damage by 70%(ish) if its needed. Orbs dont make much of a difference outside of Speed (more turns means more damage but also more health/options) and Health 2/3 (whichever is the highest available).
You can use Guard or Counterstance against any abilities cast. I took the time hitting all his armor pieces for each of his stances and it was still a pretty easy fight. (skipped a lot of fights so I dont think I was overleveled)
The trick to each battle is really to identify the pattern/trick to each fight and prepare accordingly. Neitdhart for example has a speed of ~160 and will start using special moves after losing ~1/3 of his HP. Thus keeping enough CP for Morning Moon is ideal but sometimes using Lustrous Slash to reset his pattern is better.
Another thing to take note of is that learning when to heal is more important than being able to heal. You secondary contractor is slower in mech battles compared to Valimar, thus you need to maximise there turn usage when they come around. For example, one 400EP heal may restore a large portion of HP and CP, but using two 200 Ex Arts to setup buffs/debuffs is just as good.
Finally, do not be afraid to waste CP on defend. The main use of defending is simply to be able to pass a high damage turn safely whilst you ready yourself with the followup heal/attack.
Which is weird, because if I remember correctly, she shouldn't even BE a subcontractor.
The whole subcontractor thing is nonsense anyways, in cs3 you will get even more characters linking with Rean's mech when they weren't there with him during the trials
I agree. When I heard that Sara is a subcontractor I had this WTF moment. So why not Towa or Angelica ?
