Far more common are early demon hunts where it is hunting at like 80% sanity. While not instant, it can really catch people off guard a lot. That is why I typically carry a cross in with me when I go into a house. As soon as I find the ghost room I throw the cross down and that avoids most issues with early hunts.
If you're getting demons that actually use their ability to hunt within the first minute or so, I'd consider yourself very lucky. Start taking smudges in first.
