For convenience, the devs have provided a loadout pre-programmed to fill the truck completely (the ALL tab on the bottom left corner of the loadout screen), and also an auto-add feature which will immediately apply the assigned loadout to the truck upon entering the lobby.
Should you die, there is a handy "BUY" button on the loadout screen as well, that will allow you to restock your item storage to the exact point where your selected loadout is usable again, all in a single click. Do keep in mind though that it is not counting any items that are already in the truck, so it may light up if you don't have a full spare set in storage.
I differ from most however in saying that once you finally understand it... it is pretty convenient after it is all set up; like you can get games going in only a couple clicks each.... restocking too (Before the new UI, you had to click on each item from a scrolling list and then purchase them one at a time... it was horribly tedious to restock back then)
About the only real trip-up point is that when you purchase stuff on the shop side, your shopping list of items doesn't get automatically cleared... which can lead to double purchases. Be sure that you hit the trash can icon when you are done, or if you forgot something before and want to just buy that.
I would advise only keeping two full truckloads on items at any one time... that way when you die and reload the truck with the ALL loadout, the quick restock "BUY" button comes online to buy a new truckload for the next time it happens. As such, I only ever actually use the shop tab for the "purchase three items" daily.
