You can place them in the larger locations to help determine the location of the ghost (either initially of after it moves). You can hear things like ringing phones, or door touches, or whatever.
Any sound you can hear if you were actually standing there, can be heard in the truck if you have a sound sensor within range of it. The range of the sound sensor will be shown on the map in the truck, and which sensor is picking up the sound will be shown on the top right screen, to the right of the map and above the activity board. So if you have multiple sound sensors in place, you can tell which one it is picking up the sound.
