Does it still count as being in the dark if I use candles?

Wondering if I'll still get a response from the Spirit Box and all that stuff you need to do in the dark.

I assume so. You can even leave your flashlight on. I had also gotten responses when there was glow sticks around and I had my flashlight on.

Yes, but a Mare will tend to not answer a Spirit box if torches and candles are on nearby. Glowsticks don't count.

As far as I'm aware, a candle doesn't count as an "actual" light source. As in, the ghost ignores it. I've never had a mare not do its thing because of candles. A candle acts like a light source when trying to view a room through the live video feed in the van and it's in the room (removing it from the room or picking it up and switching to another item helps with this), but other than that, it's just there to help keep your sanity from dropping too quickly.
