With the Prison being a Large map, you can use the first hunt to guide towards the ghost room.
After that, you need to knock out as many possible evidences as you can. UV, Ghost Orbs, DOTS are all evidences that can be found fast, others can be acquired passively, like placing a writing book in front of a cam and see if it rises off the surface.

A thing to know is that the Ghost Speed is not default. I believe it is set to 150%, so you cannot effectively rely on the ghost's footstep speed to guide you to an easy conclusion.

Other than that, there are other ways to deduct a ghost's identity. The Paramic can give you a unique scream sound, revealing a Banshee. If you hear many "paranormal noises" in the mic in quick succession, you'd be facing a Myling. Placing salt down a passage that the ghost *has* to go through during a hunt can also reveal a Wraith if it is undisturbed.

There are websites that provide a "cheat sheet" and map guides if the challenge does prove to be a pain in the butt, if you do need additional help.

Sometimes though, the game is stingy and you have to rely on good ol' luck or repeated effort. Wishing you luck on your challenge though!

The UV glowstick is your best friend in this challenge, obviously to detect UV evidence but it acts as a decent light source too.
Also bring flashlights but leave one at the entrance of the map and place another one at any point of reference just to not get lost easily.

Here's what I did to complete the challenge:
As soon as you enter the prison, leave the main entrance door open and go inside the Inspection room at the left and hide in the far right corner of the room, this will be your best and "safest" hiding spot from now on to complete the challenge because it's so close to the entrance, I've had instances where the ghost entered the room but couldn't find me.

NOTE: The second best hiding spot is at the Visitation Security room where the (broken) fuse box usually spawns, just hide between the fuse box and the furniture, the ghost shouldn't be able to find you.

For now hide in that corner just next to the cabinets and wait for the ghost to hunt, from there you might identify the type of ghost by hearing the footsteps as well as its ghost room, the main entrance door will be your alarm (if it closes, the hunt just started), now two things will decide if you keep doing the challenge or not:

  1. If you can hear the ghost spawning and traveling near you, means that its room is very close to the entrance, keep playing.
  2. If you can't hear the ghost hunting, then its room is very far from the entrance, quit the match and try again.
To tell when a hunt is over, go to the lightswitch from that same room and try to use it, if the game lets you, then the ghost stopped hunting, you can exit and go for more items.

Your best bet is to get the ghost room at the visitation rooms, main hall, or at the admin hallway to the right of the entrance, even the same entrance works, but it's risky. You have little time to find the room in between the hunt cooldowns.
Always navigate with a UV glowstick at hand and keep a thermometer and the book along, freezing breath will tell you if you're at the ghost room, immediately throw the thermometer and book in that room and go back to the hiding spot. By the time you go back to the truck and enter the prison, the ghost might've interacted with the book (ghost writing evidence) or the thermometer registered low temperature.
Bring the rest of the tools like EMF, spiritbox, DOTS, but save a slot for the UV glowstick.

Also memorize the type of sound the ghost makes when it hunts to immediately run away to the hiding spot, since it's harder to react with no lights.

In short, try to get the ghost room as close as possible from the entrance and use the UV glowstick as your primary light source.
