once again as mentioned in other posts, complaining about realism in a game where ghosts actively commit serial murder on a near daily basis really dosnt make any sense.
Phasmophobia is a horror game, being more powerful than the thing actively trying to kill you takes away the horror aspect of the game, no one wants another generic horror game that can only utilize jump scares to give it the title of a horror game.
The ONLY time I sprint is when i'm setting up.

so you are complaining about a movement mechanic making you slow only to suggest a new mechanic that would randomly stop a player completely while also slowing them down, makes sense.
keep in mind that every ghost throws a ton of random things while hunting, in the end you would be tripping and bumping into everything in the house, a bumping/tripping mechanic would inhibit the player far more than any sprint duration.
if your still looking for realism, many people who believe they were attacked by paranormal entities claim to be inhibited or restrained in some way, it could be said that our low stamina in the game could be a sort of influence set by the ghost or being exposed to several entities over time.
Games that lack any realism can kill brain cells.

the story about the little girl who played GTA,
thinking cars explode when flipped,
did manage to get enough of an adrenaline rush,
to get her family out of the flipped car,

If the slow is caused by the ghosts,
then most of the ghosts shouldn't have the effect.
Wraith would do it.
Demon could.
Goryo could.
Yokai could, depending on which one,
(there are many kinds of Yokai)
Then they should add a class system.
Priest would have a crucifix necklace,
with signature item, Bible.
The Bible can work like a reusable smudge stick,
by saying certain Bible quotes.
If the Ghost catches the Priest,
while his crucifix necklace has a charge,
or the held crucifix has a charge,
it scares the ghost away stopping the hunt,
and uses a charge of the crucifix.
The Techy could repair broken electronics.
The Photographer's taken photos would have double value.
The Seer could see the ghost,
but their eyes need direct view of the ghost,
so you couldn't van cheese the ghost sight.
and the Seer is the target of the ghost,
while they are in the building,
until they are dead.
