If I recall, the potato and the "Hoh" sound it makes is a tribute and reference to Psycho, who is one of the bigger content creators in Phasmophobia who sciences out the game and shares knowledge of a lot of tricks (and potential exploits) players can use and be aware of. I do not know if there is anything else beyond that in regards to the potato.

As VanilliaLucia said, this is a reference to PsychoHypnotic. But apparently, there's nothing you can actually do with it, other than throwing it around. It's just an easter egg.
