Are you using the flashlight?
I recommend watching some videos or reading some guides. The in game tutorial is not great at teaching you how to play effectively.
Someone already covered how to shoulder mount flashlight, which is good. When the flashlight starts flickering, that's a hunt and the ghost can kill you. If the breaker was off and you weren't using flashlight, you likely had no idea it was even after you until it was too late since you couldn't see any flickering lights.
As for the difficulty with evidence, The first step is to locate the ghost's room. Most evidence will not work unless you are in the ghosts room, some may work if you happen to be right next to the ghost even when it's not in it's room. Thermometer is generally the go-to for locating the ghost room, but if you don't have one yet, that EMF is likely to be your best bet. Saying the ghost's name does raise activity, but it also raises aggression rather quickly. If all you want is for it to do something, say so. "Give us/me a sign", "show yourself", and "do something" are all trigger phrases that may prompt the ghost to interact without raising the aggression as much as the name does. If finding the room with EMF, you will want to use these. Not only do you need an interaction for EMF to go off, even if you are not nearby it may give it's location away with a sound, an opened door, or a light turned on/off that you didn't touch. After you have the room located, you should have a MUCH easier time getting evidence, and actually having things happen besides you dying.
