What on earth is the 'G' counter on the clicker?

I can't find anything on the internet describing what on earth that number is suppose to be or what it does

I believe what you're referring to there is the counter for VIPs or guest list queues. You get a bonus if you let in that many people from those places.

It referess to the "Guests". When you let people in that are in the guest list (a required amount), you will get a Bonus. Same thing with VIPs, there is a "V" on the clicker.
