Well, the two things are mutually exclusive. To choreograph character actions to specific moments in the text, you need enough time to pull them off; and you need emphasis on particular moments in the text.
Instant text means the player bypasses all timings, and it doesn't take long before two characters end up walking into each other, or someone gets stuck in the wrong pose for the wrong text box, etc. When that happens, the game softlocks because it can't carry out the cutscene as intended. So there's both a creative and a technical issue =P

Ooh, that'd be fun! I still haven't had the chance to play Lufia 2 myself, but I do think it has a cool combat system/Zelda influence.
