C2 - So I beat Ripper Roo, and got dumped back to Warp Room... now what?
Do I actually need to get all the gems in all the levels to progress further?

The doc said he'd speak to me again after I got 5 crystals, but he never did come back. And the other scientist never spoke to me after the first time, though I have 5 gems (4 of them white).

To achieve 100% and finale ending video you must have all gems. Now use central platform to switch betwean warp rooms floors. After that go to 2-2 level (reaver) and find suspicious box jumping path.

I doubt I'll be getting 100% / all the gems. I'll give them a shot, but won't waste too much time on it if it becomes a bother - I'm no compulsive completionist, finished C1 at only 72% or so.

I had tried jumping on the central platform but nothing happened. A friend told me I need to press "R1" but I don't remember any such info/hint shown in the game. Will give it a try later.

Only Gold\Platinum Relicsin CB3 and any Relics in CB1/CB2 are optional. All gems required to complete the game. 2nd starting when first ended at 100%, 3d game start when 2nd ends at 100%. Same for CTR, Crash bash and all other Crash games (hmm, some Spyro too?).

In CB1 it few less important cause it open first ending of two. First - The Great Hall, than - Cortex Boss fight level. It also important order to achieve maximum 105% (or 103 without relics), or The Great Hall do not add one of the last 1% before Cortex.

The "first ending of the 2" was good enough to me in CB1 - those gems are way too much of a pain to get. They're easier to get in CB2 because unlike CB1 it seems that dying does not keep you from getting the gem, so I'll give it a shot, but I'm not going to do something I don't find fun for hours upon hours just to count a game as "finished" - that's what the "Z Not Worth the Time" category in my Steam library is for. If I get an ending like in CB1 I put it into "Z Finished' and watch the true ending on youtube.

In remake only coloured Gems require no death (death in any bonus stages or prior to 1st checkpoint not counted). In original all level require this.
In CB2 and 3 some levels have death platform - if you reach wt death they keep present. After you step on it you can die anywhere on the level (some levels with backtracking).

Game not easy like Spyro, but still not a hard. Except maybe some Gold/Platinum(+achievements) Relics.
P.S. You must have stable 60 FPS and no less - or timer be work differ speed than it must. I guess same for unlimited FPS.

From my experience, in C1 any death keeps you from getting even the white Gem.

I didn't 100% any of the Spyros either.

Like I said, I'll try for the gems and whatnots until it becomes a pain, and then I stop.

Are you talking about the Relics? I don't even try for those. I'm not into speedruns. My framerate is stable enough once drop Shadows down to High (running on a 1050 ti paired with an ancient i7-920). This one and the Spyro trilogy are very well optimized (though Spyro would always chug for a while after loading a level before all the background loading finished.)
