I suggest trying capping the game at 60 fps or even 30 fps if this issue still happens. As it turns out, framerate actually does affect the game in certain ways. For instance, Crash and Coco run ever so slightly faster at higher framerates (or the game is faster as a whole, not sure, either way it affects speedruns). If you are on a floating Bonus platform at high framerates, the characters can detach from them while running around and fall back down, which is only a visual effect though. Also, if your framerate is too low below 30 fps, then the Hog and Polar levels in Crash 1 and 2 are almost impossible because the Hog and Polar don't jump high enough to cross the gaps.
With weird little issues like those, it wouldn't surprise me if the framerate being too high was also the cause of your bike stopping the wheelie for no apparent reason. By the way, you can't lose your wheelie from turning too much, so don't worry about that.
I found the problem. My controller. Check if your controller is not "turboing" some buttons. In my case the "X" or "A" was on turbo mode (meaning if I hold it, it'll press it repeatedly). Just removed the USB and connected again.
That explains why there's few ppl with this problem.
