The brand of headphones you choose in up to you, just don't get headphones with multiple speakers in them that's just silly. You want to have the virtual surround effect, not imbalanced noise.
Even better would be a physical surround sound system, but those cost thousands of dollars for a good one.

Those will be fine too, what's most important is sound quality and comfort. Get a good soundcard plug those in and enjoy.
The louder the noise, the less time you can be exposed to it before chance of permenant hearing damage. Lookup a decibel chart.
Don't get "gaming headsets" or "gaming" anything, really, get good headphones and a separate mic
I owned a bunch of "gaming headsets" back in the day, including Razer and Logi... now I use Beyer DT770 and have a spare Audiotechnica AD700. Both are immensely better than any "gaming headsets" I have used, in both sound quality and positioning.
I can easily hear opponents at maximum hearing distance ingame using the DT770. (If it means anything, I got eagle rank in 25 wins solo queue and then stopped playing MM).
A true surround sound experience can only be obtained with proper speakers, not headphones due to HRTF. You can however use virtual surround which emulates HRTF, and it works quite well. 5.1 or 7.1 headphones simply use a higher quantity but lower quality of speakers in each earcup, due to space limitations obviously.
If you've only ever used gaming headsets, do yourself a favor next time you look for a pair and get proper headphones (after reading up on head-fi.org). You will see the light...
To hear opponents footsteps and others sounds i think the top priority is to have a good sound card for that.I had a pc about 7 years ago and and with that I could hear players so good in all directions so good I can easly shot them through walls in cs1.6 that why so many players called me cheater for that LOL and I used so cheap headphones that cost only few dollars...
My son uses the Tritton Triggers and for the price they are really quite good.
Not on the same level as some high-end headphones but still better than turtle beach and the likes.
But imo, Beyerdynamics are amazing.
I use the DT990 with a Antlion ModMic.
well i bought Razer kraken long time ago and its good very good sound quality and bass however that headphones not very helpfull in fps it dont have 7.1 surround system and also not have a MIC but sounds really good
But about 2 days ago my kitty just bite my headphone cabel and its not work anymore will go to rapair it soon :D
