Keep in mind that the beta version of CSGO runs in insecure mode. You will not be able to connect to VAC secured servers (which requires trusted mode). Also, you will get an alert about needing to update your client (which is not possible to fix).
With that said, here's a quick and easy way to launch the game without the hassle of launching the terminal and entering long paths. All you need to do is replace [your_user_name] with what it actually is. When you run the terminal app, it will tell you in the title bar, and also [your_user_name]@[name_of_your_computer]
In Automator, create a new Application.
In that application, add an action "Run AppleScript" For the content of that AppleScript, and paste the following script -
tell application "Terminal"
activate
do script "bash '/Users/[your_user_name]/Library/Application Support/Steam/steamapps/common/Counter-Strike Global Offensive/csgo.sh'"
end tell
Save the script on your desktop or your applications folder, which is located in /Users/[your_username]/Applications
For anyone who is curious, CS2 was unable to play on an M1 Mac mini, despite attempting fixes described in https://www.reddit.com/r/macgaming/comments/16vi5mz/counter_strike_2_running_constant_60_fps_using/. Perhaps users with M1 Pro or M2 chip may have better luck.
