UPD. *No, they can't.
But they can hear you slashing with your knife, they can hear jumps, throwing items, aiming with scoped weapons. One thing what most players doesn't realize, when you're jumping, it will make a sound. I'm not speaking about the landing.
That's why holds tend to fail since the opponent can hear if they keep switching back and forth.
so is it weapons that you have a taking out animation and a sound, like the smg where you smack it or the AWP where you pull the thing?

Oh, I see what you mean. I would rather say "picking up" then "unlocking". You can hear the same sound when you are picking up an object.
But you still can't hear person switching their equipment.
