Which guns should I use?
I've just fought 9 toes and when I tried this game years ago I got to the same point but now I'm determined to do a proper play through.
Anyway I've got 8 or 9 guns and no idea which I should use and why. I'm playing as a soldier if that helps.

If someone could point me in the right direction I would appreciate it

Soldier's skills mostly support Combat Rifles and Shotguns. Focus on these first, but feel free to use any other weapon type that might outdamage them.

Each character specializes in certain types of weapons. If you use those kind with the appropriate character, then things will just generally work out better. That doesn't mean you can't use other weapons though. If something is doing more damage or has a good element or whatever, then you can switch over and do whatever you want. It's all personal preference. I personally don't like pistols and so I never use them. I'm more of an SMG, shotgun, sniper type of person.

As for which weapons to use, compare the stats and use the best ones. Again, it's personal preference as to which stats you want to be using. I have a certain threshold of how low the accuracy stat should be. I'm sure some people go more for damage or other things.

use any weapons that feel good to you. honestly any weapon can be used in this game for a long time.i had kept the very first weapon for a good 15 levels and it was still ok. elemental damage scales to your level. and shotguns deal alot of damage so they last a while. but any good weapon will last you 4 to 8 levels.

Best way to have fun - just use what you like, use what feels effective for you.

Don't limit your options.

Early stages try to have at least 1 of each weapon on hand so you don't run out of ammo
for me, it pretty much depends on the situation and which DLC i'm playing through. if i'm playing through the "Zombie Island" DLC, for example, i'll unequip my Shock Bulldog and Maliwan Defiler, and replace them with my S&S Crux and Jakobs Unforgiven (saving the Atlas Ogre for the Loot Goons and Badass Tankensteins)
Doesn't matter what guns you use on lower levels.

Use a sniper for long range, assault rifle/smg for mid range, and shotgun/pistol for close range. It's also worth having a fire gun, as they do a lot of damage vs unshielded enemies.

Weapons are randomly generated so you have to compare the stats to see which is better, when in doubt use the gun and see if it kills stuff better than your previous one.
