Anywho, the build itself is Heavy Armor, One-Handed, Block, Restoration, Alteration, and Alchemy.
Your main enemy here is fire. As such, potions that help to aleviate that weakness are needed, such as this little beauty;

Other than that, Spellbreaker comes in handy.
All in all, playing on Legendary difficulty at level 56. Easily one-shotted by fire breath attacks and the occasional fireball if im not paying enough attention.

Right now I'm playing a Succubus paladin, using the succubus race from nexus mods, heavy armour with one handed sword and shield along with healing spells. It's basic but a lot more fun than I imagined it would be. I try to avoid the old stealthy archer approach 'cos everyone uses it and it makes the game way too easy.
All options can be selected from MCM, so you don't really get any features that you do not want. You will automaticaly get race skills and custom hight settings, but those seem to work well with all overhauls I have tested.
Check out feature descriptions and tables. I strongly recommend using "Live Another Life" with this mod, so you can setup differences safely in LAL prison, before starting the game.

Witches and wild mages are also interesting overall, and based on your own interpretation, but usually no more than hide armor, daggers, staves, and whatever you deem appropriate as far as spells.
D&D Barbarian types are also an interesting and challenging play in the magic-rich Skyrim. Avoiding all magic, including potions and enchanted items, can be VERY challenging.
One of my favorite unique classes is a Khajit merchant. Clothes only, no weapons, Sneak, Speech, Pickpocket, Lockpicking, some Illusion and Alteration for support, no offense himself at all but for his hands, using hired muscle only (Uthgerd). VERY challenging, especially when you delve into draugr territory. For this reason, Barbas is also a permanent companion.
I like to stick to buffing magic as opposed to traditional healing spells. Seems more fitting.
I also have a "Dark" variant, that uses illusion magic to manipulate other people, as well as specialising in Aborption Magic. (Skyrim doesn't have many distinctive absorption spells though).
