Other than that, unless you use mods that effect difficulty and/or leveled lists, you probably wont notice a big difference if your plan is to cap yourself out, be it at 51 or 81.
As for enemies scaling with you, i believe enemies stop scaling with you at level 50 and there they remain. However if you go up to level 80, your Health, Magicka and Stamina totals will be stronger than at 50 even if you don't add anymore armour/weapon perks, so you will be a stronger character overall.
This is not true. There is actually 1 single enemy that will always scale to your level....
Enter the Magic Anomaly...their level scale is your level times 1.75, infinitely...so yeah...gg

Yep, and because they can always spawn as part of a Radiant quest given by Tolfdir, they are always an option to fight and test just how much damage you can do......eh...and how much health they have lol...
You can absolutely play your character without the perks, acquiring them on a more "legitimate" basis. Having, acquiring, the perks does not define the playstyle, nor the roleplaying experience.

It's not about "legitimacy" of what you've done as the player, it's about the experience of building the character. If you just 81 the char, there's basically nothing else for you to RP as anything experienced from thereon will be very weak and virtually meaningless in terms of accomplishment. But, maybe not for you, so, to each his own. You can, however, get your XBox char on to PC if that's important to you.
Also, if your saves "disappeared", there are two main reason I can think of. You deleted Skyrim and saves and reinstalled without having cloud saves. Or, you installed MO and moved your saves out of their traditional place, but they're still on your machine. (Try searching *.ess on your HDD.)
I have to agree, the character evolution is the game. I've made a few characters that I consoled up to silly high levels and got bored super quick.
Level 50 is the soft level cap where rewards and enemies reach max levels. 81 is the theoretical maximum if all skills hit 100 and unlocks the ebony warrior to test you (who can be killed in one hit on legendary difficulty). Going higher is going in to the realms of extreme bs and it's gets boring for sure.
The legendary system thing is kinda good and bad for me. It means I can use only the skills I like to keep levelling up, but on the other hand - where do you stop? It just gets silly.
I personally hope to see a levelling system similar to fallout 3 and NV in the next elder scrolls game. You just get xp for kills and missions (which encourages exploration and quest completion) and put skill points and perks in to whatever you want. The skyrim way with all the having to use specific skills to level up encourages excessive grinding and makes quests feel uniportant with the crap rewards. At least if you got a ton of xp for it you wouldn't feel so bad, but the system doesn't support it :(
