This is not a sign of save file corruption. Skyrim will actually inform the player, if the save is corrputed.
Also, timeline of me and Skyrim (i.e what I noticed, what I tried and what happened):
Got Skyrim, DLed 200 or so mods (and used LOOT to sort them) and played the game just fine
Two days later, decide I should download even more mods and so I do that (and used LOOT to sort them too)
Try to start Skyrim, hitting new game will give me the Dragon Logo+Music while hitting Load/Continue traps me in an infinite load screen
Deactivated all the new mods after restarting my computer, the problem persisted
Deactivated every single mod, the game worked fine
Reactivated every mod, problem persists but I am unsurprised.
I was thinking I might have to just re-install the game and see how that goes, but if anyone has any ideas about what to do, I'm all ears.

There is still this try, in case that your game is hitting in to very persistent memory bug in Skyrim.

One other thing to check is that if you have any Workshop mods in your Data files. Workshop is suffering from a bug and usubscribing from files does not remove them. Is it possible that bugged Workshop file is trying to force itself in to your game and causing this problem?
Well, at least not before I get my morning coffee. It seems that I slept quite late this day.

I've reinstalled Skyrim and some mods, so I'm going to see how that goes and get back to you. My brother suggested that I may have downloaded a mod that ended up messing all my other mods up, and while I doubt that's what it is I can't help but wonder if he's right haha
Read what LOOT is telling you to fix.
I have noticed however that the "Dragon logo" stage appears to be an intermediary between the main menu and the game's intro. idk if that helps at all but hey. I'll try running the game with every single mod activated now, wish me luck
