I have 190 plugins running at the same time, in addition to texture mods. Many of them heavy scripts. I haven't had any CTDs (that were random, and I didnt cause myself) after creating a bashed patch and using an ENB (even if you dont use an ENB, you can still use ENB boost).
Edit: Might want to post your specs in your OP too.
I would see about making a bashed patch, especially since its random CTDs. Im no expert, but with that many plugins, it seems like it would be a good idea.
Im not really sure how ENBboost really works either, since I just use a full out ENB preset, but with an ENB preset you have to set the video memory settings. Not sure if you'd need to do the same for just ENB boost though. Im mentioning this because random CTDs can also be caused by too much VRAM being used. As in more than is on your video card.

I do not see any certain troublemaker in your load order. Remove safety load and try this instead.

ENBoost is a handy option. It releases memory usage from your card to your computer, trough enbhost.exe. Most ENB presets already have that setting enabled. Make sure that it is set as described here. Ignorse settings below GLOBAL - those are for peoples actually using S.T.E.P. Toggle them, if you encounter problems.

You seems to have wrong patch there.
From what I can tell you dont have Monster mod.
But you have Immerse creatures.
So you should have.

Instead of

Some of your errors in your Papyrus seems to come from the mod.

How have you installed your mods?
MO or NMM?

I only have Vivid Landscapes - All in One and Skyrim HD 2k Textures, that's it texture wise.
I'll look into those, thanks. Don't see a reason for Summerset to be doing this, I use LOOT over and over and bashed patches beforehand. I've removed Magic of the Magna Ge and Populated Lands Roads Paths and Legendary Cities TES Arena.
Could very well be those. Skyrim HD 2K is a 1.8GB file of textures. You aren't going to be rendering 1.8GB of textures all at once, but its certainly a large file and its even easier to reach maximum VRAM with Vivid.
Whats the SMIM merged plugin? I use SMIM, but I dont use a merged plugin file, but I know its a huge texture compilation.
You can use something like MSI Afterburner to see your VRAM and GPU usage. 90% sure its the VRAM. 1.7 GB of VRAM seems really low, especially with everything else in your computer. Certainly odd.
You can find it here.

All small errors can bring one CTD to skyrim.
