But seriously tho, try Requiem. It changes early to midgame so much and it is easy to install without any other mods. Late game is pretty much the same.
For the last couple of months, though, I've been playing an evil half Redguard, half Highelf vampire mage/assassin. Playing as an evil character is quite refreshing to me, so I find him pretty fun. Plus, I never got to play around with the Vampire Lord much, so once I get that form, things will become even more interesting. I use Sancrosanct for this playthrough. Great mod.
My current theme has been characters with no spell casting ability at all. In that line I have played a strict hunter who has no permanent home just a camp that moves around as I lived off the land and bartered meats and pelts to make a little gold. The mods Hunterborn and Camping Kit of the Northern Ranger become the forefront in that scenario. My favored character without magic use has tended to be an Archer/Assassin type who travels the land in search of "bad people" and eliminates them so the good folk can live peacefully and the dead remain at rest. Not above taking on a bounty quest to earn some extra coin or a Jarl's favor now and then either.
While it is true that they follow me, I do ask Inigo for suggestions and just go with his thoughts while Sofia's blunt humor and obliviously lewd nature leaves us to awkwardly travel. It's actually been really fun, to my surprise. If I get Vilja involved, the party will be complete.
Vilja = The Bard
Inigo = The Ranger
Sofia = The Warrior
Me = The Guardian
First playthrough I was like jack of all trades, slowly turned into pure mage, next I was going to be stealth hunter, quickly changed my mind to mage again. Guess that's my fate then.
The first skills are conventional for a Nord - archery, one-handed, light armor, smithing.
But Illusion magic is also used, specifically the mind-affecting spells - fury, fear, calm, courage, and their upgraded versions. Nothing else from Illusion.
Finally, Speech. I use the Ordinator mod (highly recommend it), and there's some perks to boost shouting in it. It also has perks for a bard build as well, which I'm trying out in my current game.
I call the character a skirmisher because she goes into battle with a war axe in one hand and illusion spell in the other, so no blocking. Until you get the perk to affect draugr and dwemer enemies going toe to toe with them isn't recommended.
