You can have several studio and make joint project. For example a AAA game requires 100 employees, so you might need more than one studio to make a AAA game (joint project).
Once you have hired a HR, ssign it to a studio (click on the hiring button and select HR). An HR boosts the happiness of your studio(s), and you can manage the schedules of your employees.
Regarding an accountant, when you make a new game, you assign an accountant to that game, then you will save on taxes. Yo ucan assign/unassign accountant even when a game is already release. To do that, click on the game of the game on the right panel and select Assign an Accountant.
A producer is required to make Big or AAA games. He also boosts the productivity of your employees.
Regarding RPG/strategy, when you create a new game, look at the far right of your screen and you can switch the game genre.
Side note, you should use the unstable steam branch which has a better tutorial. To do that, open Steam, right click on City Game Studio, select properties, click on the betas tab and selct unstable from the option list.
