What is the difference between the "live" and the not-so "live" version?
Does it work in the campaign?
How do I install it in the GOG version of the game?

Live mod is intended for live games where combat is automatic, another mod is intended for manual combat. Yes, it works in campaign.
Sorry, I don't know how to install it for GOG version.

You can find Downloaders online where you enter the steam workshop url, then manually unzip the files into your game folder. Doesn't always work though.

Like you, i have a game from GoG.
And if you are not on steam, you cannot download AND upload mods on steam.
(For the download, use steam downloader)
This is the reason why i put my mods elsewhere.
For AoW:PF it is on Paradox mod, for AoW 3 it's on nexus mod...
Note that one of them is a simple copy of a mod found on steam, i just uploaded it on Paradox in order to have a personnal backup... hoo.. i just see that 5 players use it :)

Invasions are disabled in empire mode unless the planet has specific modifier.
AI difficulty depends on your skills only. I wonder why you are asking about my skills, I have 2k+ hours and I doubt my choice of difficulty level/mods is relevant for new players.
