Oh yes, true that!
I was able to build a very huge ship with the 7 reactors, and tbh it is far enough because i could able to build anything i wanted for a 30+ crew. At the end i felt kinda lost tbh, and had to open the map often to see where i am!
Is it too much to ask what the reason is? That could help us to understand what we should or should not do that may hurt our game functionality.
I've built ships with at least 9 farms on the top level. I never noticed any issues with a huge, multi-level, mega-ship.
It's still fun to play the game within the limits of not cheating though. 7 reactors is technically plenty, but it is nice to have infinite energy to just go crazy and build everything you want onto you ship.
So, it raises the question as to whether it is it a limit on 7 physical reactors or the energy that 7 reactors produce. Either option has a bypass - technically-speaking.
Of course, there could be no real reason to have more than 7 reactors other than a game design choice to limit the player to design their ships within constraints.

These reasons are real.
I can say in honesty that I never really observed anything untoward with bypassing the power limits and building a huge ship.
I have an i5-9600K, 16GB RAM and a GTX 1660ti which is not exactly a high-end PC.
I would put all of the reactors, then all of the shields, the hyperdrives - 9 or 12 farms on top (whatever the max is that can squeeze onto a single level) - a ton of crew quarters - I would end up running circa 40 crew.
You'd get the same glitches you would ordinarily get - ie bots getting stuck, etc - but nothing that stood out as a definite issue.
I think I last played around 6 months ago.
I have built my 7 reactors which supply x amount of power and I am using x amount of power which is what the game seems to use to prevent you building more stuff.
The trick was to lower the energy used - ie set it to 0, the game then thinks you can build more stuff and the energy used slowly increased until you max it out - then you just lower it again to build more stuff.
That method of cheating the energy didn't cause me any issues that I noticed. There was no limit or breaking point that I noticed.
