Unfortunately the shop has a single point entrance. This is most likely to handle the enter and exit routines in a more effective manor code wise.
You might consider doing two shops that face each other in a small plaza with the shop shelves on the plaza for decoration as shop shelves are not limited to be placed in the actual shop. Of course those shelves won't count in the shops but you make it look that way. I've even made display cases with advertising panels and shop shelves that can be placed anywhere in my zoos.

yeah unfortunately ill have to find another way around this, but with my local zoo you go through the gift shop to enter and exit so i was trying to do something similar but unfortunately it just wont work, they cant even enter the gift shop now too

Yes, many zoos' buildings have more than one doorway, to aid movement. Unfortunately PZ doesn't allow it apart from guest entrances.

If you are looking to do a layout, you could do it with the gift counters and use the gift shop shelves as just decorations as grampers62 mentioned.

Do the gift counters work individually? the gift-shops are a large tile are they not? with one entrance. if the shelves are just ornaments, what are people buying?

It's all about creating the effect in some cases rather than making things that actually work. The modular shops have expansion tiles that connect to the base unit that do effectively make the modular shop larger which does increase the number of guests in the shop. So it can be needed for a modular shop to have more than one counter but that is not normally the case. Note that the current version of the game does not save the expansion tiles in a blueprint! The shelves for the shop counter may be placed anywhere. So the make great static display objects all over the zoo. They can be one reason for a modular shop to have issues though. It seems that guests need space to move in the shop so to many shelves can cause the game to block guests and staff as they try to navigate in the shop. Rule of thumb is two meter wide routes through the shops. And three meter arc of clear space in front of the counters that doesn't touch the one meter deep box in front of the door.

What all that means is...
We can make the shops work well and look really nice within the shop area. It also means we can use those shop shelves and things to decorate other things in the zoo to give it a more lived in look. When we combine a shop shelf with an advert panel we get an opportunity to create some really fun advert kiosks to place in our zoo that we can use to advertise things in our zoo. For instance, a shelf full of the panda plushies with an advert board that is set to advertise the panda enclosure in the zoo.

Remember, sometimes it's all about having some fun creating different things with what we have...

Just to be clear, I am not talking about using the modular souvenir gift counters. The OP wants where guests have to walk from the zoo entrance through a gift shop to enter the zoo. I was just thinking a building or open area path which leads from the zoo entrance to the zoo proper could be done in a winding way past the individual gift counters of fantastic hats, loony balloons, and just a memento counters. The shelves from the modular could be used as decorations. Back to the old days of building a gift shop. LOL Of course, that layout may not justify the number of vendors. Just a thought. :)

Yeah, exactly varick. A good example of how this can work can be found in my zoo Upsome Hill that is in the workshop.

Check out the main building at the south entrance. It's actually shown in the attached video

It is a shame stuff in the shop, the stuff you put on the shelves, are not listed in a guest's items when they buy them, as some things are, then at least you know what they have bought! At least they should come out holding a bag.
